The Best Healthy Meal Prep Breakfast Recipes
These are the recipes I come back to again and again because they’re simple, practical, and my family loves them.
Breakfast Sandwiches
Breakfast sandwiches were one of the first things I started meal prepping because they were my biggest weakness at the drive-thru.
Making them at home made it so much easier to stay on track and control what I was eating. When I first started, I would make a batch on Sunday, wrap them up, and keep them in the fridge for the week.
To prep ahead, make the sandwiches completely, wrap them in plastic wrap or parchment paper, and store them in the refrigerator. In the morning, you can heat them in the microwave or a toaster oven before heading out the door. If you plan to reheat them in the oven, I recommend wrapping them in foil instead.
You can easily switch up the protein – bacon, sausage, ham, or even keep them vegetarian.
Here’s the complete recipe with the weekly prep instructions.

Egg Bites or Egg Casserole
Egg-based recipes are one of the easiest breakfast meal prep options because they store well and reheat quickly.
If you love egg bites from Starbucks or other coffee shops, making them at home is not only more affordable but also gives you full control over the ingredients. I like to make a batch on Sunday, store them in a glass container, and reheat a couple each morning.
You can also make a full egg casserole, slice it into portions, and use those throughout the week. One of my favorite things to do is use those slices to quickly build a breakfast sandwich in the morning.

Overnight Oats
Overnight oats are one of the easiest and most affordable make-ahead breakfast recipes.
You can prep 4- 5 jars in just a few minutes and have breakfast ready for the entire week. If you’re short on time in the morning, just grab a jar and go.
Before eating, give it a stir and add a splash of milk if needed to loosen it up. There are so many variations, so it’s easy to keep things interesting. Below is a list of our favorites.

Baked Oatmeal Cups
Baked oatmeal cups are perfect when you want something easy, portioned, and grab-and-go.
After baking, let them cool completely and store them in a container in the fridge for the week. If you make extras, you can freeze them and use them later.
When reheating, I like to warm them in the microwave for about a minute. A small trick is placing a mug of water in the microwave while heating to keep them from drying out.

Steel-Cut Oatmeal
Steel-cut oatmeal is one of my favorite healthy breakfast prep ideas.
It takes longer to cook, which is why making it ahead is so helpful. I cook a big batch on Sunday, store it in a large container, and then scoop out what we need during the week.
Reheat it in the microwave, add a little milk or maple syrup, and it tastes just as good as when you first made it. You can also add yogurt, fruit, or nut butter for extra protein and flavor.

Quinoa Breakfast Bowls
Quinoa breakfast bowls are a great option when you want something hearty and high in protein. They’re made with a quinoa and egg base, and from there you can mix in whatever you like – ground sausage, bacon, kale, broccoli, or any other veggies you have on hand. It’s a very flexible recipe that’s easy to customize.
This recipe is simple to make, stores well in the refrigerator throughout the week, and reheats beautifully.
One batch makes several servings, so I usually keep it in a large container and portion it out as needed. If you prefer something more grab-and-go, you can divide it into individual containers ahead of time so it’s ready when you need it.

Muffins
Muffins are always a win.
They’re easy to make, easy to store, and perfect for mornings when you need something quick. I usually make a batch, let them cool, and then store them in a container in the fridge.
They can also be frozen if you want to make extra. Just take one out ahead of time or warm it up in the microwave.

Smoothie Kits
Smoothies are one of the easiest breakfasts when everything is prepped ahead of time.
I like to portion out ingredients ahead into individual bags so everything is ready to blend in the morning. It saves time and makes sure I always have what I need.
Even though these are stored in the freezer, I prep them as part of my weekly routine so mornings are simple.
