    Vitamix Green Juice

    Did you know that you can use a high-speed blender like Vitamix to make green juice! That’s right! There’s no need to purchase an expensive juicer with this Vitamix Green Juice recipe.

    I love green smoothies. This detox smoothie, triple berry smoothie, and blueberry kale smoothie are in constant rotation. 

    But did you know that I also love whole fruit green juices? I discovered green juices last summer when I started having digestion problems. All I knew then was my stomach was upset, and drinking a clean green juice made it feel better. I later found out that I had celiac, but that’s another topic for another time. 

    So, I filled my refrigerator with cold-pressed green juices from Whole Foods, but at $7 a bottle, that got pricey to drink every day. After a month, I decided to make homemade green juice using my Vitamix blender. 

    High Powered Blender vs. Juicer

    Initially, I thought about purchasing a juicer. But juicers are pricey and take up a lot of space. Plus, I already own a Vitamix blender, and the only significant difference is juicers are more efficient in removing the pulp and fiber from the fruit. 

    With a blender, this process is a little more work. However, it’s still easy to make green juice using a blender. 

    Reasons you’ll love this recipe.

    • Budget-friendly. Instead of paying $7 for an 8-ounce bottle of green juice, you’ll spend between $10-$13 for a week’s worth of fresh organic juice.
    • Nutritious. Juicing is a great way to get the health benefits from fruits and vegetables without digesting the fiber. This is helpful for people that are having digestion problems.
    • Hydrating. Green juices are made with water and juice, so it’s a healthy way to increase hydration.
    • Make-ahead. You can make green juices on Sunday for the week or make a triple batch to freeze for the month. I’ll give more meal prep tips below.

    I highly recommend purchasing organic ingredients to keep this easy green juice recipe juice clean and free from chemicals, preservatives, or additives. 

    Kale is one of the most nutrient-dense foods on the planet. It is a nutritional powerhouse! It’s a good source of Vitamin A, K, and C, antioxidants, and helps lower cholesterol, blood pressure, and your risk for cancer and heart disease.

    Curly kale is the most common variety found in grocery stores. If purchasing whole leaves, then remove them from the stalks before placing them into the blender.

    Another option is to purchase large bulk bags of kale of prewashed chopped kale. If there are leftovers, then you can freeze kale to use in other smoothies or soup recipes.

    Celery is an excellent addition to a green juice recipe. It supports digestion and inflammation.

    Green apple adds fiber, Vitamin C, A, and antioxidants. It also adds a nice sweet and tart flavor to the green juice. You can use other apple varieties, but green apple gives the best taste, in my opinion. You can also freeze fresh apples to use in juice and smoothie recipes.

    Ginger also works wonders with digestion. It also provides another layer of flavor.

    Lemon has a high amount of Vitamin C and soluble fiber. It helps with digestion, the prevention of kidney stones, and heart health.

    Cucumber is high in nutrients, helps with hydration, and contains antioxidants.

    Can you make vegetable juice in a Vitamix?

    Absolutely! Add all the vegetables into a Vitamix, blend with water, and strain into a glass cup. The formula I use is about 2-3 cups of vegetables to 2 cups of water.
     
    Of course, depending on the type of vegetables used, you might need to adjust the amount of water.

    How long does Vitamix Green Juice last?

    You can store fresh green juice in an airtight glass container in the refrigerator for up to 7 days.

    Is a Vitamix better than a juicer?

    I don’t think a Vitamix is better than a juicer when it comes to making juice. Both produce delicious fresh juice.
     
    A juicer is more efficient in removing the pulp and fiber; however, it’s messy and more time-consuming to clean. 

    A Vitamix takes a little extra work to strain the fiber and pulp from the juice.

    However, if you have a Vitamix and don’t mind a bit of extra work, you don’t have to spend the money or waste the space on a juicer.

    When should I drink green juice?

    That’s really up to you. When I was at the height of my stomach issues, I felt a lot of relief drinking green juice first thing in the morning.

    Now I’ll have a smoothie in the morning and drink a green juice around 3:00 pm to curb my mid-afternoon cravings and give a burst of hydration.

    Cooking Tips

    • Swap in spinach or other greens. Kale is a nutritional powerhouse, but spinach or other greens will also work. 
    • Don’t waste the pulp. You can stir the pulp into soups, stews, or sauces to add in extra fiber.
    • Freeze the leftovers. If you have extra juice or don’t use the pulp right away, freeze in silicone trays (like these Souper cubes). When you’re ready to use, place in a glass jar or container to thaw and then either drink the juice or use the pulp in other recipes.
    • Get creative with fruits and vegetables. This Vitamix green juice recipe is my favorite. However, you can swap in any of your favorite fruits and vegetables.
    • Strain juice with a nut bag. In the recipe, I’m sharing how to use a mesh strainer to strain the liquid from the fiber and pulp. You can also use a nut cloth or cheesecloth. I prefer a mesh strainer because that’s what I have on hand.

    How to Make Vitamix Green Juice

    • Start by cleaning all of your fruits and veggies
    • Chop the celery and cucumber into 1-inch pieces.
    • Core and chop the apple into small pieces. 
    • Remove the kale leaves from the stem and then chop the leaves into small pieces. You can discard the stem.
    • Peel the ginger.
    • Add the celery, cucumber, apple, and ginger into the Vitamix. 
    • Loosely pack in the kale then squirt the lemon juice in with the fruits and vegetables. 
    • Pour in the filtered water.
    • Cover and blend on high for 1 minute or until all ingredients are blended and smooth.

    • Place a strainer over a 4-cup glass measuring cup and pour the juice, pushing the pulp into the strainer. You want to squeeze out as much liquid as possible. I use a spoon to push the pulp into the strainer. Dump the leftover pulp into a bowl and then continue with the rest of the juice. 
    • When the juice fills the measuring cup, pour the juice into glass mason jars or individual glass containers.
    • Continue until you have strained all of the juice. 
    • If you want to make more juice, then repeat the process.

    Storage tips

    • This green juice recipe will last up to 7 days in the refrigerator. I recommend, for best results, to store in an airtight glass container.
    • Freeze in ice cube trays if you’re not going to drink the juice right away. This silicone (Souper cubes) trays work great too. To thaw, place the cubes into a glass container and let them sit overnight in the refrigerator. In the morning, give it a couple of shakes and drink.
    • Freeze the green juice ingredients into kits. Prep the ingredients and then place everything into a plastic or reusable bag and freeze. To make the juice, place the frozen ingredients in the Vitamix, add water, and blender. Continue with the rest of the recipe.

    Equipment

    • small handheld juicer
    • Vitamix high-speed blender
    • Fine mesh strainer or nut milk bags
    • glass measuring cups
    • glass (8-ounce) juice containers

    Ingredients

    • 1 green apple cored and chopped
    • 1 inch chunk of fresh ginger peeled
    • 1/2 of a lemon
    • 2 large celery stalks chopped
    • 2 baby cucumbers
    • 2-3 cups kale remove stem before chopping
    • 2 1/2 cups filtered water

    Instructions

    • Place the celery, cucumber, apple, and ginger into the Vitamix. 
    •  Loosely pack in the kale then squirt the lemon juice in with the fruits and vegetables.
    • Pour in the filtered water.
    • Cover and blend on high for 1 minute or until all ingredients are blended and smooth.
    • Place a fine mesh strainer over a 4-cup glass measuring cup and pour the juice, pushing the pulp into the strainer. You want to squeeze out as much liquid as possible. I use a spoon to push the pulp into the strainer. Dump the leftover pulp into a bowl and then continue with the rest of the juice. 
    • When the juice fills the measuring cup, pour the juice into glass mason jars or individual glass containers.
    • Continue until you have strained all of the juice. If you want to make more juice, then repeat the process.

      I love the idea of making multiple servings. The ingredients, in total, seem to be about the amount as a large lunch salad. You talk about straining the fiber out and using it in other things. Why wouldn’t you skip the straining step and drink the whole thing, fiber included? Is it just a texture preference, or is that considered a smoothie instead of juice?
