    Banana Spilt Overnight Oatmeal

    All the flavors of a banana split mixed into a wholesome delicious overnight oats recipe! These are perfect to add to your meal prep recipe rotation.

    Overnight oatmeal is one of my favorite summer time breakfast recipes. Actually, I like to enjoy overnight oats year-round but I especially like to have a couple jars available when mornings are hot, sticky, and the last thing I want to do is cook anything. I should also mention, since I like to drink green smoothies in the morning, I often eat overnight oats for a snack or lunch. Basically what I’m trying to say is overnight oats are delicious and feel free to chow down a jar anytime you want.

    Over the years I’ve created many overnight oats recipes. My favorites are:

    Almond Joy Overnight Oats

    Chocolate Mint Overnight Oats

    Chocolate and Banana Overnight Oats

    Raspberry Almond Overnight Oats.

    There are many more but those are my favs.

    Just when I think I’ve exhausted every overnight oatmeal flavor combination I get this delicious Banana Split recipe popping into my head. How can I go wrong with banana, strawberry, vanilla yogurt, and chocolate? I can’t.

    Let me show you how easy this is to throw together. This recipe is a little different from other overnight oat recipes I’ve made. Typically, I don’t use yogurt just unsweetened coconut milk and oats. However, this recipe is inspired by a banana split so I decided to use vanilla yogurt in place of the ice cream. Smart, huh? Ha! It’s the little things that keep me going!

    Anyway, for this banana split overnight oats recipe I used 1/4 cup oats, 1/4 cup unsweetened coconut milk, 1/4 cup vanilla greek yogurt, 5 medium strawberries, and 1/2 of a banana. I also include 1 teaspoon chia seeds, pure vanilla extract, and a very small pinch of salt.

    I gave all the ingredients a good mix. I did need to add a little more coconut milk to have enough liquid to cover the oats. Then I covered the jar and stored it in the refrigerator overnight.

    A couple notes. I used 16-ounce mason jar containers for this recipe. Also, I used unsweetened coconut milk but you can use any milk you like. Just make sure the oats are covered in liquid prior to going into the refrigerator.

    In the morning, give it a couple stirs. If needed, add in a little more liquid to loosen up the oats. At this time I stirred in 2 teaspoons of pure maple syrup for sweetness. Depending on the ripeness of the banana used you might not need it. Last, I stirred in mini chocolate chips and saved some to sprinkle on top.

    I absolutely LOVED this overnight oats recipe. It’s creamy, delicious, and filled with chunks of strawberry and banana. The chocolate gives it a little bit of a guilty pleasure but the rest of the ingredients are wholesome and healthy.

    You can make overnight oats 3-4 days ahead of time so put this recipe on your meal prep rotation.

    Ingredients

    • 1/4 cup rolled oats
    • 1/4 cup unsweetened coconut milk extra if needed
    • 1/4 cup vanilla greek yogurt
    • 1 teaspoon chia seeds
    • 1/4 teaspoon pure vanilla extract
    • 5 medium strawberries sliced or chopped
    • 1/2 of a medium ripe banana sliced or chopped.
    • small pinch of salt
    • 1 tablespoon mini chocolate chips
    • 2 teaspoons pure maple syrup

    Instructions

    • In a 16-ounce mason jar mix together rolled oats, coconut milk, yogurt, chia seeds, vanilla extract, strawberries, banana, and salt. Add more coconut milk if need to make sure all the oats are covered in liquid. Tightly putt the lid on and place in the refrigerator overnight.
    • Remove the lid and stir 1/2 of the chocolate chips into the oats. Add more coconut milk to loosen the oats. Stir in the maple syrup and then sprinkle the rest of the chocolate chips over the top.

      Do you have to put the chia seeds in here? What is the up and down side of these? I don’t want to spend extra money on something that I only use so seldom
