    Strawberry Cucumber Smoothie

    Strawberry Cucumber Mint Green Smoothie #vitamix

    This week is green smoothie week here on Organize Yourself Skinny. Vitamix sent me the new S30 personal blender to test out and I have been a blending queen. So far, I have prepared super green smoothieand a cherry chocolate almond green smoothie. Both of them are delicious! Today I am making a strawberry cucumber mint green smoothie. This smoothie is a little different from ones I have made in the past because I am using more vegetables and herbs.

    I was inspired to make this smoothie by some comments on my OYS FB page. A couple readers asked if I could possibly make a smoothie recipe using more vegetables and leaving the banana out. This is something I have been meaning to do for a while so I was happy to do so.

    When I started to brainstorm this recipe I was not sure what to make so I went to the grocery store and just looked around. I am not real familiar with using herbs or a lot of vegetables in smoothies so I knew I didn’t want to choose ingredients that were to out of my comfort zone. I ended up choosing baby cucumbers and mint because it was also 90 degrees that day and those ingredients in a smoothie sounded very refreshing to me.

    I decided to blend up the cucumber and mint with some frozen strawberries and spinach. I added a little maple syrup for sweetness. You can certainly use honey or your preferred sweetener. I used coconut milk this time but you can use almond milk or whatever liquid you like.

    This strawberry, cucumber, and mint smoothie is delicious! So good! I was not sure what to expect especially when throwing a whole baby cucumber in but it was very good. Perfectly, refreshing on a hot summer day. And it is only 160 calories per serving so you can  have as a mid day snack to cool off if you want.

    In the future, look for me to post more green smoothie recipes using different vegetables and herbs. If you use a lot of different veggies and herbs in your smoothies I would love to get some ideas. What are your favorite combinations?

    I used the new Vitamix S30 to blend up this smoothie recipe. It worked great. This blender is a perfect size for someone cooking for 1 or 2 people or maybe just has a small kitchen. It is small, sleek, and easy to hide away when done using. It  comes with a 20 ounce to go cup and a 40 ounce container that the recipe can be blended in. I will post my full Vitamix S30 review on Friday.

    Strawberry Cucumber Mint Green Smoothie

    Ingredients

    • 8 frozen strawberries
    • 1 baby or gourmet cucumber
    • 5 mint leaves
    • 1/2 cup baby spinach
    • 2 teaspoons pure maple syrup
    • 1 cup coconut milk
    • water for consistency if needed

    Instructions

    • Place all ingredients into the Vitamix 40 ounce container and secure into place on the blender.
    • Turn dial to 1 then slowly increase to 10.
    • Blend for 25 - 30 seconds or until you get the consistency you would like. If it is to thick add a little water and blend again.

      When you say coconut milk in these recipes, do you mean coconut water? I just use plain water anyway, but I am curious.

      I think it would be better to just eat those things separately and tastier too. More satisfying, you can down those smoothies so fast.

      I’ve used carrots before, they don’t overpower the other favors, but add a nice bit of sweetness
