    Turkey Wrap with Chipotle Avocado Spread

    Turkey Wrap with a Delicious Creamy Chipotle Avocado Spread

    Some of my favorite recipes resulted from leftover ingredients or ingredients that were getting close to their end. My turkey bacon ranch wrap, greek turkey wrap, leftover taco pizza, and chopped taco salad are perfect examples of this. I try very hard not to let any foods go to waste.

    One of my “go to” methods for using up ingredients is to throw it into a wrap. That is exactly what I did with this new turkey wrap recipe. I always grab avocados when I head to grocery store each week. I love putting them in mason jar salads, making BLTS with them, and I plan to use them in a smoothie very soon. This week I was not sure what I wanted to do with them. Well this morning the little fellas looked like they were getting ready to call it a day so I decided I better use them up while I still had the chance.

    I decided to mash them up with some lime, chipotle peppers, and cilantro then use it as a spread for my turkey wrap. Yum! This avocado spread is so versatile and can be adjusted to your taste. Add a extra chipotle and maybe some hot sauce for a little extra heat. Or my husband suggested adding some chopped jalapeño for a kick. Play around with this spread. You can switch up the spices and flavors depending on what recipe you want to use it in.

    For some texture and crunch I layered cucumbers and tomatoes. You can also add baby spinach, romaine, or any other kinds of vegetables you have on hand.

    I decided not to add cheese. In my opinion, with the flavors and creaminess from the avocado spread, I don’t feel the wrap needed any cheese.

    I used wheat Flat Out Wraps. I am a big fan of these wraps because they are tasty and only 100 calories per wrap. I personally find it difficult to find a good low calorie wrap but these fit the bill.

    These wraps alone are mighty big so I cut them in half. 1/2 of a wrap is plenty for a serving especially if you plan on eating something else with it.

    This Turkey Wrap with Chipotle Avocado Spread was delicious, fresh, and a perfect lunch.

    Ingredients

    • 2 avocados skin and pit removed
    • 2 chipotle peppers in adobe sauce seeds removed and finely chopped
    • Juice from 1 lime
    • 1 – 2 tablespoons of chopped cilantro
    • 1/3 cup plain greek yogurt
    • salt and pepper
    • 10 thin slices of organic smoked turkey breast
    • 2 to matoes sliced
    • 1 large cucumber sliced and quartered
    • 5 wheat Flat Out wraps

    Instructions

    • In a medium bowl, mash together avocado, yogurt, chipotle peppers, cilantro, half the lime juice, salt and pepper. Give it a taste. Add a more lime juice, salt, and pepper as needed.
    • Divide the avocado spread among the 5 wraps. Layer the turkey, cucumbers, and tomatoes on each of the wraps. Roll up and serve.

    Notes

    Make Ahead Instructions
    These wraps are best made the day you will eat them. If you want to make them ahead of time I recommend layering the turkey first then avocado spread. This will prevent wrap from getting soggy.

      This sounds delicious, but what do you do with the remaining half of the lime juice?

      I know you don’t have any greens in your recipe, but maybe it’s because of the make ahead? I nearly always use spinach in mine. The great thing about spinach is that even if it wilts, it’s still delicious and doesn’t take away from the wrap. In fact, if you have trouble wrapping, wilt it first!

      Just wanted to share that tip.

      Oh and I’m trying to give your recipe 5-stars but it’s only highlighting two. Not sure why. 🙁

      So I am guessing if they won’t all get eaten within a day, I should just prep them as we eat them? Seems like they would get yucky sitting in the fridge a few days. Can I make the avocado spread ahead of time? Or will that go bad?
