Grilled Buffalo Chicken

Equipment

  • 1 Large zip-top bag or shallow dish for marinating

Ingredients

  • 1/4 cup chicken stock
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup Frank's Red Hot Sauce divided
  • 2 tablespoons ranch seasoning mix
  • 1.5 pounds boneless skinless chicken breasts about 4 medium chicken breasts
  • 1 tablespoon salted butter
  • blue cheese or ranch dressing

Instructions

  • In a medium bowl, whisk together the chicken stock, olive oil, ¼ cup Frank’s Red Hot Sauce, and ranch seasoning mix.
  • Place the chicken breasts into a large zip-top bag or shallow dish and pour the marinade over the chicken.
  • Refrigerate for at least 2 hours or overnight.
  • Heat the grill to medium-high heat.
  • Remove the chicken from the marinade and discard the marinade.
  • Grill the chicken breasts for 5–6 minutes per side, or until the internal temperature reaches 165°F.
  • Let the chicken rest for 3–4 minutes.
  • Melt the butter in a small bowl and whisk in the remaining hot sauce.
  • Brush the Buffalo butter sauce over the chicken.
  • Serve with blue cheese or ranch dressing.

Notes

  • For meal prep, grill extra chicken to use in wraps, salads, and bowls during the week.
  • Chicken can be frozen in the marinade for up to 3 months.
  • Chicken thighs or tenders can be used instead of chicken breasts.
  • This recipe can also be baked in the oven. 
Oven Instructions:
To bake instead of grill, place the marinated chicken breasts into a baking dish or sheet pan and bake at 375°F for 28–35 minutes, or until the chicken reaches an internal temperature of 165°F. The exact cooking time will depend on the thickness of the chicken breasts. Brush with the Buffalo butter sauce before serving.
