Shrimp Fried Rice

This healthy shrimp fried rice is delicious, easy, and better than take out! Store-bought convenience items bring this healthy shrimp recipe together in less than 30 minutes, making it a perfect weeknight meal.

Ingredients

  • 1 lb medium raw shrimp peeled and cleaned
  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves grated
  • 2 teaspoons grated ginger
  • 1 tablespoon sliced green onions white parts
  • 1/4 cup teriyaki sauce
  • 2 eggs beaten
  • 16 ounce bag of frozen stir fry mixed vegetables
  • 3 cups cooked brown rice
  • 3 teaspoons sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon chili oil

Instructions

  • Stir together the shrimp, garlic, ginger, sliced green onions, and one tablespoon of olive oil in a small bowl.
  • Heat the other tablespoon of the olive oil in a large skillet or wok over medium-high heat. When the oil is hot then add in the shrimp and cook until pink and opaque. This step should take about 3-4 minutes.
  • Remove the shrimp from the pan and place it into a clean bowl. Drain any liquid from the bowl and then stir in the teriyaki sauce.
  • In the same pan, add the beaten eggs and cook until just set. This step takes about 1-2 minutes. Place the eggs on top of the shrimp into the bowl.
  • Add the frozen vegetables to the same pan and cook on medium-high heat until vegetables are heated through, about 4- 5 minutes. Drain any excess water from the pan.
  • Heat one tablespoon of sesame oil in the pan and then place the rice in. Let the rice cook in the pan for about 2 minutes and then stir and cook for another 2 minutes. This step helps to create crispy pieces of rice.
  • Stir in the shrimp, eggs, soy sauce, sesame oil, chili oil, and vegetables, and cook for another 2 minutes or until heated. Serve hot.

Notes

You can use fresh shrimp or frozen - Regardless, make sure the shrimp is raw. Cooked shrimp can get rubbery when used in the recipe.
Prep the shrimp ahead of time - Cleaning the shrimp takes the longest time, so try to purchase raw, clean shrimp.  If you don’t, clean and prep the shrimp the day before to save time and aggravation the night you’re going to make this recipe.
Use leftover brown rice - When I have fried rice on the meal plan, I’ll make the brown rice over the weekend and store it in the refrigerator until I’m ready to use it. I often have brown rice portioned out in the freeze to use in recipes.
You can use fresh vegetables - I love the convenience of frozen stir fry vegetables, but you can certainly use fresh vegetables. Peas, carrots, bean sprouts, onions, mushrooms are all delicious in this shrimp fried rice recipe.
Store and Reheat
Shrimp fried rice can be made on Sunday to warm up during the week for a quick lunch or dinner. After the recipe is prepared store it in an airtight glass container and refrigerate.
Reheat in the microwave for 2-3 minutes or until hot.
You can also freeze shrimp fried rice into individual portions to enjoy for a quick dinner or lunch later on. Use glass or plastic containers. You can also freeze in freezer bags.
Reheat from frozen in the microwave for 3-4 minutes or until hot.
