- 1 lb medium shrimp
- 1/4 cup chicken stock
- 3 tablespoons olive oil
- 4 garlic cloves grated or finely minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- pinch of red pepper
- juice from half of a lemon
In a medium bowl mix together the shrimp, stock, olive oil, garlic, salt, pepper, and red pepper. Let the shrimp marinate for 1-2 hours or overnight.
Preheat oven to 425 degrees.
Squeeze lemon juice into the shrimp and mix together.
Pour shrimp and marinade into a 9 x 13 baking dish and bake for 10 -12 minutes or until shrimp is pink.
Serve hot with vegetables and your choice of side.
The shrimp can marinated for up to 3 days.
