Taco Stuffed Peppers is a healthy Mexican recipe that’s easy to make, and the whole family will love it! Make on Sunday for the week, or freeze ahead for future meals.

Ingredients

Ground Turkey Black Beans Taco Seasoning Pepper Jack Cheese Salsa Brown Rice Bell Peppers

Step 1: In a large skillet over medium heat, cook the ground turkey until it is cook through and is no longer pink.

Step 2: Add the black beans, taco seasoning, and water.

Step 3: Cook for 5 minutes or until bubbly and the liquid in the meat mixture has slightly thickened.

Step 4: Remove from heat and add 1 cup cheese, 1 cup salsa, and rice.

Step 5: Stir ingredients together.

Step 6: Divide the filling among the bell peppers. Then arrange the stuffed peppers side by side in the pan.

Step 6: Sprinkle the tops with the rest of the cheese. If there’s leftover filling, then place it into the dish around the peppers.

Step 7: Cover and bake for 45-50 minutes in a 400 degree oven.

Enjoy hot with sour cream, cilantro, or other Mexican-inspired toppings.

Store in an airtight container and refrigerator for up to 5 days.
