Healthy Broccoli Cheddar Soup

This healthy broccoli cheddar soup is gluten-free and packed with broccoli, carrots, onions, garlic, and cheese. It's creamy, delicious, and is the perfect Copycat version of Panera's Broccoli cheddar soup.

Ingredients

Onions & Garlic Grated or Shredded Carrots Nutmeg, Salt, and Pepper GF Flour Chicken Broth Coconut Milk Cream Cheese Broccoli Parmesan Shredded cheddar cheese

Step 1: Add the olive oil to a Dutch oven and cook over medium heat. Add the onions, carrots, and garlic.

Step 2: Stir together and cook until onions are translucent and carrots are tender. While the veggies are cooking make a slurry (whisk GF flour and chicken broth) and set aside.

Step 3: Add the nutmeg, salt, and pepper.

Step 4: Stir together and cook for another couple of minutes until fragrant. Add the slurry and cook until thick, about 2-3 minutes.

Step 5: Stir in the stock, milk, cream cheese, and broccoli.

Step 6: Bring to a boil and then simmer for about 25 minutes or until soup is hot and the broccoli and carrots are tender.

Step 7: Using an immersion blender to blend the soup until smooth. You can also use a regular blender for this step.

Add more chicken broth if the soup is too thick. Make it as smooth or chunky as you want.

Enjoy with a side of glute-free bread or crackers. Make it on Sunday for the week or freeze for lunch or dinner later on.
