Slow Cooker Healthy Beef Stroganoff

When you need comfort food, nothing compares to classic Slow Cooker Beef Stroganoff. This healthy stroganoff includes tender sirloin, mushrooms, and the most delicious silky savory sauce, all tossed with egg noodles.

Ingredients

Sirloin Steak Seasonings Onion and Garlic Beef Broth Worcestershire sauce Slice Mushrooms Dijon Mustard Cornstarch Sour Cream Egg Noodles

Step 1: Place steak into the bottom of the slow cooker and then sprinkle salt, pepper, and dried dill weed onto the steak.

Step 2: In a small microwave-safe bowl, add the chopped onion, garlic, and olive oil. Microwave for 3-4 minutes.

Step 3: In the bowl with onion and garlic, stir in one cup of the beef broth, Dijon mustard, and Worcestershire sauce.

Step 4: Pour the broth mixture over the beef in the slow cooker.

Step 5: Place the sliced mushrooms on top.

Step 6: Place the lid tightly on the slow cooker and set to cook on high 2-3 hours or low for 5-7 hours.

Step 7: Whisk the cornstarch into the remaining ½ cup of beef broth to make a slurry.

Step 8: Stir the slurry to the juices in the slow cooker.

Step 9: Place the lid back on and set it to cook for another 10-15 minutes. The sauce will thicken during this time.

Step 10: Stir in the sour cream, place the lid back on, and let it cook for about 5 minutes.

Step 11: The sauce will be hot, thick, silky, and delicious. Give it a taste for salt and pepper.

Step 12: Serve hot over egg noodles. You can also serve with rice, mashed potatoes, or keep it low carb with cauliflower rice
