Ingredients

Boneless skinless chicken thighs Carrots, celery, onion, and garlic Dry white wine Dried thyme Milk Brown rice Romano cheese

Step 1: Heat one tablespoon of olive oil over medium-high heat in a large pot or dutch oven. Add the chicken thighs.

Step 2: Brown the chicken on both sides. Remove chicken and set aside.

Step 3: Add the carrots, celery, onion, garlic.

Step 4: Cook vegetables until softened. During this time chop the chicken thighs into small pieces.

Step 5: Pour in wine to scrape up any bits then add chicken and broth. Bring to boil then add milk and rice.

Step 6: Bring to a slow boil and simmer for another 5 minutes or until hot.

Step 7: Stir in salt and pepper.

Sprinkle with grated Romano and serve with crackers or bread.
