Cheeseburger Macaroni

Cheeseburger macaroni baked into a wholesome, comforting healthy ground beef casserole. Make it ahead for the week of freeze for later.

Ingredients

Lean ground beef Hamburger Seasoning Spices Worcestershire sauce Whole grain macaroni Butter and flour Milk and chicken stock Shredded cheddar cheese Grated romano

Step 1: Bring to a boil a large pot of salted water. Add the macaroni and cook for 5 minutes.

Step 2: Drain and place the al dente pasta into a 9 x 13 casserole dish. Set aside.

Step 3: Add the ground beef to a hot skillet. Use lean 95/5 or 90/10 ground beef.

Step 4: Break the meat into small pieces as it cook. When there’s a little bit of pink left; stir in the hamburger seasoning, seasonings, and Worcestershire sauce.

Step 5: Add the cooked ground beef to the casserole dish with the pasta

Step 6: Use the same pot that you used to make the macaroni to make the sauce. Start by making the roux

Step 7: Whisk in the milk and chicken stock until the roux (flour and butter) dissolves. Continue to whisk so the flour doesn't stick to the bottom.

Step 8: Stir in the rest of the seasonings. Then cook sauce over medium until it becomes bubbly and starts to thicken.

Step 9: Once the sauce begins to bubble (not boil), remove from heat and slowly stir in cheddar and romano cheese.

Step 10: Stir until the cheese completely melts. Then taste for salt.

Step 11: Add the sauce into the casserole dish with the pasta and beef and stir.

Step 12: Cover with foil and bake for 50 minutes. Remove the foil and bake for another 10 minutes.

Step 13: Let the cheeseburger macaroni sit for 5 minutes before serving.
