Medjool Date Energy Ball Recipe

This energy bite recipe uses only medjool dates as a base along with nut butter.

Ingredients

  • 1 cup Medjool Dates about 14, pits removed
  • 1/2 cup creamy nut butter
  • 1 tablespoon chia seeds
  • 1/4 cup add-ins like chopped nuts chocolate chips, or other dried fruit.
  • 1 teaspoon pur vanilla extra
  • dash of water

Instructions

  • Soak the dates in warm water for 10 minutes and then drain.
  • Places dates, nut butter, and chia seeds into a food processor and blend until it forms a thick dough. If the dough doesn't come together then add 1 tablespoon of water.
  • Stir in any add-ins, if using.
  • Roll into 20 balls and then store in an airtight container and place in the refrigerator, Let the energy bites sit in the refrigerator about 3 hours or overnight. You can also place in the freezer.

Notes

These energy balls can be made ahead of time and stored in the refrigerator up to 5 days and frozen up to 3 months.
