This past weekend was a big freezer cooking marathon for me. Saturday morning was spent grocery shopping and the afternoon lent a few hours to preparing some staples such as taco meat and a couple batches of pizza dough. My mom and I took the girls to a Halloween work party at the zoo around dinnertime so the rest of the cooking would wait till Sunday. However, I did have a delicious batch of slow cooker applesauce going while we were out.
Starting early on Sunday and ending around 6:00pm, with only a few breaks in between, I prepared 3 loaves of bread, 15 breakfast burritos, 18 breakfast sandwiches, slow cooker macaroni and cheese, 18 bean and cheese burritos, and 50 pancakes. I feel like I should have prepared more than that but I guess time was moving fast and I was moving slow. Anyways, breakfast and some lunches for the next 2 weeks are complete. I attempted to get the rest of the dinners prepped and prepared tonight without much luck so I ended up planning a couple slow cooker dinners and easy prep meals for this next week.
Cooking like this definitely takes a toll on my feet and legs. By the end of the night I am ready to pass out. I highly recommend that if you attempt a marathon session to wear very comfortable shoes. My crocs have saved me many times.

Tuesday ~ Slow Cooker Pulled Pork Sandwiches (recipe coming), Homemade Macaroni and Cheese (recipe coming), Broccoli
Wednesday ~ Chicken Sausage, Brown Rice, and Corn
Thursday ~ Tuscan White Bean Soup (recipe coming) with Garlic Bread
Friday ~ Caramelized Onion and Goat Cheese Pizza (recipe coming)
Saturday ~ Slow Cooker Enchiladas (recipe coming)
Sunday ~ Out to dinner or leftovers
As you can see we are trying lots of new recipes this week. However, I am little nervous because my original thought was to have most of the ingredients prepped and ready heading into this week which has not happened. Hopefully all works out but if not we can always reach for the tacos 🙂
