Veggie Egg Casserole

This Veggie Egg Casserole is the perfect healthy breakfast recipe to feed a crowd or to make ahead for a quick breakfast during the week!

Ingredients

Veggies Eggs Spices Greek yogurt Shredded cheddar cheese

In a large skillet, cook the sliced mushrooms until tender,.

Place them into the casserole baking dish.

Cook the onion and red bell pepper until tender and then add in the broccoli.

Add the rest of the cooked veggies into the casserole dish with the mushrooms.

Whisk together the eggs, Greek yogurt and spices.

Pour the egg mixture in with the veggies.

Cook in a 350 degree oven for 45-50 minutes.

Serve hot. You can assemble the ingredients the night before or cook and store in fridge for the week.
