Healthy One-pot Chicken and Rice


Chicken Onions & Garlic Chicken Broth Parmesan Cheddar Cheese Brown Rice

Don't forget the broccoli! Use fresh (steamed), frozen, or steam in bag!

Season and cook the chicken. Remove the chicken from the pan and set it to the side.

Add the onions. Cook until the onions are translucent then add the garlic and cook for another 2 minutes

Add the chicken broth and scrape up all the brown bits. You can also use white wine for this step.

Add the broccoli and simmer in the broth until hot and the liquid is reduced. Save time with steam in bag broccoli.

Now add the chicken back into the pan and cook until the chicken is heated through. This takes about 3-4 minutes.

Add the rice and cheese into the pan! Cheddar is a favorite but switch it up with any flavor shredded cheese.

Stir everything together and let the one-pot chicken and rice recipe cook for another minute or so until it's hot.


Eat now or meal prep for lunch or dinner during the week.
