This Olive Garden Zuppa Toscana Soup is a lightened copycat version of the classic using poultry sausage, creamy russet potatoes and hearty kale. This healthy soup recipe is delicious and is better than the restaurant version.

Ingredients

Italian Poultry Sausage Onions & Garlic Dried Basil, Oregano, & Thyme Crushed Red Pepper Flakes Russet Potatoes Low-fat Milk & Chicken Broth Chopped Kale

Step 1: Cook the Italian sausage over medium-high heat until it is no longer pink. Break into small pieces as it cooks.

Step 2: Add the onion, garlic, basil, oregano, thyme, and crushed red pepper flakes to the sausage and cook for 5 minutes or until the onion and garlic start to soften.

Step 3: Stir in the potatoes, chicken broth, and milk and bring to a boil and then simmer until potatoes are soft.

This takes around 15-20 minutes. Give the soup a taste, and then add in the salt.

Step 4: Add the kale into the soup.

Step 5: Give the soup a few stirs until the kale wilts.

Step 6: Then cook for another 10-15 minutes or until the kale is soft.

Step 7: Pour into bowls, sprinkle with grated parmesan, and serve hot!
