This past Monday was my daughter’s snack day and I wanted to move past the cheese sticks or goldfish and make something homemade for her to bring in. In my search for something healthy and kid friendly I came across this chocolate chip oatmeal cookie recipe inside my box of Silver Palate Thick and Rough Oatmeal. Don’t be scared by the name (my husband was) because it is actually very good. This oatmeal is 100% pure natural rolled oats and is simply delicious. These cookies were a huge hit with her kindergarten class!
The recipe states that you can get 4 dozen 2 1/2 inch cookies. But I like my cookies bigger so I was able to make about 25 -30 cookies.

Approximate nutritional information: Calories 125 * Carbs 16 g * Fat 6 * Protein 2 * Fiber 1
1 cup unsifted white flour
1 1/2 tsp. baking powder
2 tbsp. milk
1/4 tsp. salt
1 tsp. vanilla
3/4 cup butter
1 3/4 cup Silver Palate Thick and Rough Oatmeal
1/2 cup sugar
6 ounces of semi-sweet chocolate morsels
1/2 cup firmly packed light brown sugar
Preheat over to 350
Stir together flour, baking powder and salt. Using a hand blender mix together butter, white and brown sugar, egg, milk, and vanilla until well blended. Slowly add in the flour mixture a little a time. Then slowly add in the oatmeal. Then chocolate chips. This batter gets thick and hard to stir. I found that I needed to add in a couple more tablespoons of milk to manage it better.
Drop by tablespoon onto ungreased cookie sheet.
Bake for 10-12 minutes or until lightly browned.
These cookies were scrumptious! Next time I make them I think I will substitute some whole wheat flour to increase the healthiness. Because I was making them for my daughter’s snack day didn’t want to take any chances with a baking fail.
