My summer has been filled with easy to prepare and simple recipes. Whether it is a lazy day, or event filled one, I really have not felt like cooking much else. That’s okay, because even the most effortless recipe can still be healthy and delicious.
This steak, pepper, and blue cheese wrap recipe is definitely being added to my catalog of minimal effort, yet super tasty, recipes. It only uses 5 ingredients (besides oil and seasoning) and takes about 20 -25 minutes to prepare.
I made this wrap recipe last week at my parent’s house so they were able to taste test it for me – my entire family enjoys their role as official SMK taste tasters. Everyone loved the wrap, especially my dad. He called me the next day to tell me how good it was and to give the recipe to my mom. She has already made it again for him.
Of course, in my opinion, you can’t really go wrong with combining steak and blue cheese. It is kind of like chocolate and peanut butter – at first bite you know these two ingredients are meant to be together.

Steak, Peppers, and Blue Cheese Wrap
Serving size: 1 prepared wrap
Servings: 4 prepared wraps
Calories: 315 * Carbs: 27 * Fat: 11 * Protein: 28 * Fiber: 4 * WW Points +: 8 * Old Points: 6
Ingredients
1 teaspoon olive oil
1 red pepper, sliced into strips
1 yellow pepper, sliced into strips
.75 lb sirloin steak, sliced into strips
Salt and pepper
4 tablespoons blue cheese yogurt dressing
4 whole wheat wraps (no more than 130 calories per wrap)
Directions
Step 1. In a medium frying pan, over medium heat, cook peppers in olive oil until tender crisp. This takes around 5-6 minutes. Set aside.
Step 2. Season steak with salt and pepper. In the same pan cook steak until medium or whatever temperature you prefer. This only takes about 5 minutes as well. In case you are wondering you don’t need to use any more oil in this step. **Quick tip. To make it easier to cut the steak, freeze it for about 20 minutes then try to slice it. I was able to get the slices pretty thin with this tip.
Step 3. Lay out the wraps and spread 1 tablespoon of blue cheese yogurt dressing on each one. Divide the peppers and steak between the 4 wraps and roll up.

Make Ahead Instructions
I have not tried to freeze any part of this recipe so not sure how that would work yet. However, you can make the peppers and steak ahead of time. Keep them in the fridge and when you are ready to eat prepare the wraps.
