I first learned of salad pizzas way back when I worked at the Olive Garden in college. Back then they made a ceasar salad pizza which was basically a white pizza with a ceasar salad plopped on after it was cooked. Such as simple concept yet so good! Since then I have loved salad pizzas and have found that you can pretty much put any favorite salad on any favorite pizza and it will turn out yummy! Personally, I like to keep it to a white pizza meaning the sauce is only olive oil and garlic but it still taste great with a red sauce pizza too.
I made this recipe even simpler by using whole wheat pitas. Pita pizzas are a great easy (and healthy) way to get your pizza fix. Not to mention perfect for portion control.
For this salad pizza recipe I decided to keep the pizza part simple with just olive oil, a little garlic, and mozzarella cheese. Then for the salad part I used my favorite salad ingredients – baby spinach, red onion, grape tomatoes, crumbly blue cheese, and balsamic vinaigrette. Super good! I think my favorite part about this recipe – besides it coming together in only 15 minutes – is the way the spinach starts to warm up a bit after you put it on the pizza. Delish!
If you have not tried salad pizzas before then you must give this a shot. If you like pizza and you like salad then you will love salad pizzas!
- 1 whole wheat pita
- 2 teaspoons olive oil
- 1 garlic clove, minced
- ¼ cup mozzarella cheese
- 1 ½ cups baby spinach
- 5 grape tomatoes, halved
- 2 slices red onion, diced
- 1 tablespoon crumbly blue cheese
- 1-2 tablespoons balsamic vinaigrette (I use Newmans Own)
- Heat oven to 350 degrees
- Spread olive oil and garlic on pita. Sprinkle cheese over top and cook for 10 – 15 minutes or until cheese is melted.
- While pizza is cooking place spinach, tomatoes, onion, crumbly blue cheese, and balsamic vinaigrette in a medium bowl and toss.
- After pizza is done place salad on top and serve.
