It is unbelievable to think that the holiday season is right around the corner. It seems just yesterday we were barbecuing and camping under the summer stars. We had such a great summer!
Well next to summer time the holiday season is my favorite time of the year. I love it all. The holiday lights, quality time with family and friends, shopping, and of course the parties. Lots of holiday parties. I would say on average I get invited to about 3-4 (sometimes more) holiday parties. Each one is a total blast with loads of memories being made year after year.
In the past, I have always been the dip girl. I make this artichoke dip that is always a hit. I don’t mind making it but after the first couple parties I am totally dipped out. Not to mention my artichoke dip is not exactly a poster child recipe for Skinny Mom’s Kitchen. Anyway, I will still bring my artichoke dip – because I think my friends would disown if I didn’t – but this year I am going to branch out a little and test my hand at sliders.
I love the concept of sliders. Basically, you get a delicious sandwich that is in a perfectly portion controlled package. I find this to be helpful especially during the holiday party season when you want to try small bites of everything but don’t want to go overboard. Of course, you need to keep yourself from eating more than one but hey if that is our biggest problem then I think we are good.
This year I am going to keep it simple by making mini cobb sliders using Kings Hawaiian ® Honey Wheat Dinner Rolls. These rolls are the perfect size for sliders. I also love how soft these rolls are and the sweetness they lend to the sandwich. It provides a nice balance with the saltiness of the bacon and tartness of the blue cheese dressing. Did I just say bacon and blue cheese?! Yum yum yum!
These cobb sliders have all the components of a cobb salad just layered into a small sandwich. Like I said I started with Kings Hawaiian ® Honey Wheat Dinner Roll then spread about 1/2 tablespoon of blue cheese dressing on the bottom layer. After that I stacked romaine hearts, thinly slice turkey and ham, hard boiled egg, avocado, tomato and crispy bacon.
Oh mama! These are delicious! I guarantee after this holiday season I will be known as the slider girl. I don’t think I will every loose my dip girl title but that’s okay with me.
Here is the easy peasy recipe.
Mini Cobb Sliders
1 12 pack package of Kings Hawaiian ® Honey Wheat Rolls
6 tablespoons blue cheese dressing
4 -6 romaine hearts, cut up to fit on rolls
1/2 pound very thinly sliced smoked turkey breast and/or ham
12 slices avocado (about 2 avocados)
4 hard boiled eggs, cooled and sliced
6 slices tomato, cut in half
6 slices cooked bacon, cut in half
Cut rolls in half. Spread 1/2 tablespoon blue cheese dressing on the bottom half. Divide and layer the rest of the ingredients among each roll. Place top of the roll back on. Serve.
These can be made ahead of time just squirt a little lemon on the avocado slices so they stay nice and green.
