Omigoodness friends last week was insane. Completely insane! Work was crazy, my house was crazy, and I was not feeling at my best. Not having a menu plan just added to the craziness. Let’s just say I ordered pizza, ate cereal for dinner, and had to buy lunch twice!
Well I learned my lesson (for now) and ready to get back on the saddle. The main lesson that I am taking away from last week is that my family has become completely dependent on a weekly menu plan. Yes our menu plan keeps us eating healthy but I think keeping us sane would have trumped health last week 🙂 I try my hardest to take a few hours every weekend to put our menu plan together but as you know life gets in the way and that does not always happen. One way I am going to try to combat this is to put together a menu plan a month at a time that way I only need to think about it once a month. Because let’s be honest thinking about it more than that has not been working to well for me. My goal is to have my monthly menu plan going by November 1st. Wish me luck 🙂

Yogurt and homemade granola
Cheese, turkey pepperoni, and Triscuits.
Artichoke, sundried tomato, and goat cheese stromboli (new recipe) with spinach salad
Italian meatball slow cooker soup (new recipe)
Cheeseburger mac n cheese (new recipe using the beef mixture from this recipe)
Rigatoni and meatballs
Bean and rice burritos (new twist on this recipe)
