In 6 weeks I will be participating in the Dirty Girl Mud Run – a 5K run filled with all kinds of fun yet challenging obstacles. I am super excited but I will admit I am a little nervous too. This is my first time doing anything like this so I am not sure what to expect. Right now I am in the best shape of my life but not sure I would consider myself 5K ready.
So over the next month, to help me feel more prepared for a 5K, I am going to be in training mode. Nothing real hardcore because I don’t think I could sustain a hardcore regimen but I am going to be a lot more focused with my food and exercise.
I want to be at my best when I do the Dirty Girl Mud Run so I am going to keep my diet as clean as possible. Not sure what clean eating is then check out the clean eating posts I wrote over the last month here and here.
The inspiration for recipes I am going to use over the next few weeks will come from the cookbooks The Best of Clean Eating 3, Everything Eating Clean, and Eating Clean for Dummies. Of course I am going to adapt them to suit my tastes and also so I can prepare them ahead of time. You will also find so SMK favorites on my menu as well.
I am going to keep breakfast, lunch, and snacks simple by only making 1 recipe for each meal for the entire week. Dinner will be different each night.
Now this week might be a little difficult because we have a wedding to go to this weekend. I will try my best but I cannot guarantee anything when I am around lots of Italian cookies and wedding cake. Oh my just thinking about it makes we want to eat – not good!

Week #1 Dirty Girl Training Diet
Make ahead tips
- I still have a bunch of steel cut oats in my freezer from last weekend’s freezer cooking session. After I warm it up I will throw some blueberries and lemon in.

Raw almonds – morning snack
Afternoon snack – 1 ounce cheddar cheese and apple or strawberries
Baked Chicken Fingers with homemade ranch dressing. Served with roasted broccoli. (new recipe)
Slow Cooker Pulled Pork and Crunchy Slaw Sandwiches. (new recipe)
Make Ahead Tips
This week will present some challenges for making dinners ahead of time. We were really busy this past weekend and I had no time to grocery shop or prep meals. I hate when that happens but I will do the best I can to prep during the week.
- Chicken fingers will be made the night of.
- Dough for pizza calzones was made yesterday morning.
- Pulled pork and slaw will be made tomorrow night.
- Hoagies will be made night of.
- There is my menu for the week. What’s are you eating this week.
