Hi everyone! Well this week’s menu plan is a lot different from last week’s. It is different in the sense that I did not have nearly the time to plan ahead. My daughter’s birthday is today and we through a little birthday party with her girlfriends from school. And I am sure you can understand that even the smallest of parties with a bunch of 9 year old girls becomes quite the occasion. So, pretty much Saturday was spent planning for the party and today was the party. Actually we just got done and I could not get to my office fast enough to get some peace and quite.
However, even with limited time to plan hope is not all lost for my menu plan this week. Last week I was able to stock up on some meals so we will be eating a couple of the same dinners this week.
I plan on using my slow cooker a few times this week using recipes from Stephanie Brandt Cornais ecookbook From Your Freezer to Your Family. This ecookbook has over 75 slow cooker freezer kit recipes. I am a big fan of her first cookbook and look forward to trying out her new one. I highly recommend checking it out. I always turn to my slow cooker whenever I am short on time to plan out dinner recipes for the week.
This week is also going to be a big smoothie week because I am working with Vitamix on creating some new recipes to highlight. I already have some tasty ones in mind. I may even put together a new hummus or guacamole recipe too. I have lots of ideas bouncing around in my head. Vitamix is also giving away a new vitamix to an Organize Yourself Skinny reader. For lunches this week I am working on a new Mason Jar Salad – Buffalo Chicken! I am really excited about it. My goal is always to make them on Sundays but I just don’t have the time today. I am hoping to put them together tomorrow night.
Now lets talk about my exercise goals. Last week I only worked out twice. My goal was 5 times. I don’t know what it was but I just could not find the motivation to go downstairs into my freezing basement to run. I know once I get going I am fine but it was hard for me last week. This week my goal is going to be to run on my treadmill 4 times. Along with running I will do 100 crunches, 100 girl pushups, resistance bands for biceps, and 50 squats. To keep me accountable I am going to put these exercises into my phone and set reminders.

- Beef curry and soup will be prepped the night before.

[…] Last week was a tough week for my menu plan. Besides the new smoothie recipes (see here and here) I put together I did not get to try any of the new slow cooker recipes I planned on. Mostly, because I had my oldest’s birthday party Sunday I did not have time to full on grocery shop and prep the meals in advance. At this point in the game I really should know better than to go into monday thinking we are going to eat certain meals when I know darn well it’s not happening. If it is not prepped on Sunday then I certainly am not going to have the time or energy to prepare the recipe during the week. But I did have some food (tacos, calzones, clam sauce, pizza dough) in the freezer that I made a couple weekends ago so all hope was not completely lost. Although, I did forget to take food out one day and then my husband got all confused for dinner which then led to him ordering Indian food one night and then we went out dinner on Saturday night. I should state for the record it does not take much to convince my husband to order in or go out to eat. He only needs the slightest reason. For example, I say, “wow it looks like it might rain on Thursday” Matt says “Sweet let’s order pizza”. I usually say no but…if he catches me at just the right moment – which he usually does – I will cave. […]
