Happy Mother’s Day to all the mamas out there! I have to say, I think Mother’s Day is probably one of my favorite days of the year. I just love taking the day to reflect on being a mom, celebrating my own mom, and seeing all the super adorable pictures that come up on Instagram and facebook of my girlfriends and their kiddos. It is such a nice day. I also enjoy going out to brunch and just laying around and being lazy all day long. It is usually really hard for me to let go and be lazy. I am one of these people that always feel like I should be doing or cleaning something. But for some reason on Mother’s Day I give myself permission to eat lots of chocolate and put my feet up and not worry about cleaning, cooking, or anything else. It is wonderful.
Before I talk about my meal plan and exercise schedule this week I first want to share a couple portraits I got done for Mother’s Day. My sister surprised me, a couple weeks ago, with a Mother’s Day Photography Package from Pumpernickel Portraits in Lancaster NY.
Lori the owner is an up and coming photographer in the Western New York area and is truly amazing. I have no doubt she is going to be one of the best and a highly sought after photographer very soon. She is so professional and was wonderful with my kids. It was a lot fun. She did such a great job that I decided I will be hiring her to take professional photos of me to be used on Organize Yourself Skinny website in the coming months.
Here are two of the portraits she took for me. I just love these!
You can see more samples of her photography on her facebook page Pumpernickel Portraits. If you live in the Western New York area I highly recommend you like her page and contact her for your next photography session.
Let’s get to my exercise schedule. Last week was a very bad exercise week of me. I had a lot going on personally and was just completely burnt out. In fact, you might have noticed I was even a little MIA on my OYS FB page and Instagram. I feel about 85% better so I am focused on getting back on track.
I am going to follow the same exercise schedule I put together last week. I will probably do this for a few weeks before I switch it up again. This way I can work on creating habit and consistency in my exercise routine.
Monday, Wednesday, Friday
- Run 45 minutes on treadmill
- Planks for 30 seconds
- Russian twists for 60 seconds
- 50 crunches and obliques
- Tuesday and Thursday
- Arms (using at least 3 of the exercises found here)
Saturday or Sunday
- Run outside
Meal plan {May 12th – 18th}

Make ahead tips
- Smoothies will be made the morning off. You could make these into smoothie freezer kits or – if you want – you can make these the night before. If you make them the night before the consistency might be thinner but they will still be tasty.
Lunch
Chopped Black Bean and Corn Mason Jar Salad
Make ahead tips
- Salads will be made tomorrow morning for the week. I am making 2 different salads this week just to switch things up a little for my husband and I. If you have questions about mason jar salads see my ultimate mason jar salad tutorial.
Dinner
Make ahead instructions
- I did not have a lot of time this weekend to prep foods so I pick recipes that are simple to prepare during the week. The one item I do have in the freezer is the pulled pork for the Cuban pita pizzas. Everything else will be prepped tomorrow or the night it is made.
I really looked forward every Sunday to seeing your plan, it reminds me to make and stick to mine!
Thank you so much. So glad you find it helpful.
I appreciate the menu planning too! For the exercise program, I totally recommend to anyone getting a polar watch and learning about the importance of heart rate. Too many people, including tons of women, actually work out to hard! It’s better to do low-intensity activities like walking for 45 minutes because it will shred the fat! THANKS AGAIN!!
Hi, I am new to your blog, and I want to thank you for sharing these fabulous recipes. I am in week 7 of WW and i love trying new tasty recipes. I do have a question, you have mentioned the lemon rissotto with the bruschetta chicken. Does it have WW points + and do you have the recipe posted?
I am going to make this chicken tomorrow night and was hoping that there was a recipe for the rissotto to go with it.
Thanks
Michelle~
Just found your site and am super excited! You are doing everything I want and need to do…can’t wait to start!!!
