Basic chocolate brownies flavored with a hint of strawberry preserves adds delicious rich flavor to this classic sweet treat.
Strawberries and chocolate, when combined in a dessert, remind me of two people that shouldn’t be together yet are somehow made for each other. Strawberries are a nutritious fruit and chocolate is well chocolate. We all love it but know we can’t indulge our every chocolate craving. So one would think a nutritious delicious strawberry would be ruined by dipping it into a bowl of rich fattening chocolate. Not the case. Instead it’s perfection in a bite. The strawberry and chocolate perfectly compliment each other. Basically, strawberries were made for chocolate and vice versa. It’s just the way it is.
Now let’s take chocolate and strawberries and bake them into a rich decadent brownie recipe that’s manages to stay on the healthy side at only 158 calories per brownie. Ultimately, this recipe is chocolate and strawberries finding their way in this world and saying “told ya so”.
I think this might be one of my favorite brownie recipes ever. I got the idea from this dark chocolate and cherry brownie recipe I found over on Cooking Light. For my version I used my basic fudgy brownie recipe and instead of cherry preserves I used strawberry.
OMG! These brownies turned out delicious. The strawberry preserves, along with the Greek yogurt, create a moist rich “melt in your mouth fudginess” that would leave you hard pressed to think they were only 158 calories. The strawberry preserves provide a hint of strawberry flavor that’s the perfect compliment to this brownie.
Like my other brownie recipes I started with butter and sugar. I used my hand mixer to cream the butter and sugars together.
Then I added in the eggs, greek yogurt, pure vanilla extract, and strawberry preserves. I mixed it until everything was blended.
Then I mixed in the unsweetened cocoa powder. This is what gives brownies that rich chocolate flavor.
Then I added the flour, baking powder, and salt and mixed until it was a dark rich brown.
Then I slowly stirred in the chocolate chips and poured the batter into a 9-inch baking pan sprayed with cooking spray. I used dark chocolate chips but milk chocolate would taste great too. I sprinkled a few chips on top before putting into the oven. That part is optional. The nutritional information is figured out with just 1/4 cup chocolate chips.
Come to mama! Just looking at this picture makes me want to get one out of the freezer. Yes I put the brownies in the freezer. Why? Because if I don’t I will eat them ALL! Plus, these brownies taste amazing out of the freezer. Honestly, they taste like pieces of strawberry chocolate fudge.
The key is to slightly under bake the brownies. Mine baked perfectly at 23 minutes. The first batch I made I baked for 25 minutes and they came out a little dry so even 1-2 minutes can make a difference. Keep an eye on the brownies. Insert a toothpick or knife into the middle and if it comes out with brownie crumbs sticking to it then it’s done.
Chocolate Strawberry Fudgy Brownies made with Greek YogurtPrint Pin Rate
- 1/4 cup softened butter
- 1 cup white granulated sugar
- 1/2 cup lightly packed brown sugar
- 1/4 cup vanilla or plain greek yogurt
- 1/3 cup strawberry preserves
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup cocoa powder
- 3/4 cups white whole wheat flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup chocolate chips
- 2 tablespoons chocolate chips to sprinkle on top optional
- Preheat oven to 350 degree.
- In a large bowl mix together the butter and sugars.
- Mix in the greek yogurt, strawberry preserves, eggs, and pure vanilla extract.
- Stir in the cocoa powder until the wet mixture turns dark and chocolatey.
- Add the flour, salt, and baking powder to the wet mixture and slowly stir until all the ingredients are combined.
- Slow stir in the 1/4 cup of chocolate chips.
- Pour brownie batter into a 9-inch baking dish (sprinkle additional chocolate chips over top if you like) and bake for 22-23 minutes.
- Let the brownies cool in the pan.
- Serve warm, at room temperature, or chilled.
