I hope you all had a nice weekend. Like many of you I was spending a lot of time this holiday weekend with family and friends.
While it was really nice to sit and relax (somewhat) it was really difficult to fit any kind of grocery shopping and freezer cooking in. I actually did not even get around to either until late this afternoon before I headed to my parents for dinner.
Thank goodness I had today off or I would have gone into the week with nothing prepared. Also, I am so glad I decided on meat marinades for this weekend’s freezer cooking challenge – not sure I would have had the energy for anything else.
When I finally got around to the challenge the marinades were easy to whip up, dump into a freezer bag with the meat, and stick into the freezer. I did not have time to make breakfast sandwiches – will do that tomorrow night – but I did put together a pork slow cooker freezer kit.

All in all this weekend’s freezer cooking challenge was a success. I do plan on doing some other freezer meals during the week. Check out my menu plan for this week’s make ahead action plan.
