OAMC (once a month cooking) or large scale freezer cooking sessions is something I love to do, but don’t always have the time for. My weekends are usually filled with dance classes, cleaning, and visiting my family. This often leaves little time for stocking my freezer. So while I see the benefits of cooking a months worth of meals in a couple days, and do it when I can, I mostly practice mini freezer cooking sessions throughout the week and on weekends. I have found mini sessions to work better for my schedule, family, and feet.
During my last big freezer cooking session a couple weeks ago many of you wrote to me with comments such as “I wish I could do that”; “I wish I had the time”, and “I don’t even know where to start with freezer cooking”.
I agree that freezer cooking, from the outside looking in, can look really overwhelming. When I post a picture showcasing a refrigerator full of uncooked food followed by another picture with the 20+ meals it is no wonder a starter freezer cook might feel overwhelmed.
It is my goal for you to feel encouraged not defeated when it comes to preparing meals ahead of time. Freezer cooking, when broken down, into smaller goals becomes a lot more manageable and realistic for the beginner freezer cook. It is easier to visualize yourself adopting this strategy and making it work for you and your family.
To help get you started with freezer cooking I am going to offer a freezer cooking challenge every weekend. This way, should you accept the challenge, you will be freezer cooking right along with me.
For the freezer cooking weekend challenge I will focus on just one recipe. If you have more time, experience, and/or feeling adventurous of course you can cook additional recipes. I will be putting together other freezer recipes, and will list them, but for the challenge I want to keep it simple. Like I said, this will help the beginner freezer cook get started and minimize the overwhelmed feelings that are often associated with OAMC and large scale freezer cooking.

This week’s freezer cooking weekend challenge is breakfast sandwiches and burritos.
In my experience, breakfast sandwiches and burritos are the perfect freezer recipe to get started with. They are easy to make and you get to experience right away the benefits of having a healthy homemade meal every morning.
Choose one of the recipes below. Each link provides the recipe ingredients, cooking instructions, freezer/reheating instructions, and nutritional information. If for some reason, you don’t have all the equipment (indoor griddle); you can easily substitute a frying pan on the stove.
Prep and cooking time is about 1 – 1 ½ hours. That does not include shopping. Each recipe makes about 15 – 18 servings.
