Peanut Butter Chocolate Chip Oatmeal Cookies

Ingredients
  • 1 stick unsalted butter, softened
  • ½ cup natural creamy peanut butter
  • 1 cup sucanat
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 ¼ cups white whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 cups rolled oats
  • 9 ounces semi-sweet chocolate chips (about 1 cup)
Instructions
  1. Preheat oven to 375.
  2. In a large bowl cream together butter, peanut butter, and sucanat.
  3. Add in eggs, one at a time, blending together after each one.
  4. Add in vanilla.
  5. In a separate bowl mix together flour, baking powder, and baking soda. Add flour mixture slowly to the wet mixture.
  6. Slowly stir in rolled oats then chocolate chips.
  7. Drop cookies by the tablespoon about 1 inch apart. Bake for 10 minutes. You do not want to over bake these cookies because they will dry out.
  8. Let cool for 1-2 minutes on the pan then place cookies on wire rack to finish cooling.
