Peanut Butter Overnight Oats

  • ½ cup rolled oats
  • 1 teaspoon chia seeds
  • 2 tablespoons natural peanut butter
  • ¼ teaspoon pure vanilla extract
  • ½ cup unsweetened coconut milk
  • 1-2 teaspoons pure maple syrup
  1. In a 16-ounce mason jar mix together the rolled oats, chia seeds, peanut butter, vanilla extract, and coconut milk.
  2. Place the lid on and refrigerate at least 5 hours or overnight.
  3. Stir in the maple syrup. Add in a little more coconut milk, if needed, to loosen up the oats.
