How to Make No Bake Energy Balls

These easy energy bite recipe using a combination of rolled oats and Medjool dates to create a wholesome naturally sweet snack.

  • 1 cup Medjool dates (about 14), pits removed
  • ½ - ¾ cup rolled oats
  • 1 tablespoon chia seeds
  • add-ins like extract, nuts, chocolate chips, or other dried fruit.
  • splash of water, if needed.
  1. In a medium bowl place dates in hot water and let them sit for 10 minutes or until softened.
  2. Place the dates in a food processor and process until the dates are chopped. Add in ½ cup of rolled oats and chia seeds. Process until everything is mixed. If the batter seems to wet then add in some more rolled oats until a thick batter forms. If it gets to dry then add in a splash of water.
  3. Stir in any add-ins like nuts, chocolate chip, or dried fruit.
  4. Cover the batter and refrigerator for 1-2 hours or until firm enough to form balls.
  5. Roll batter into 20 balls, place in an airtight container, and refrigerator for up to 7 days. Or freeze up to 3 months.
Energy balls can be made ahead of time a store in the refrigerator up to 7 days and frozen up to 3 months.
