Banana Spilt Overnight Oatmeal

Ingredients
  • ¼ cup rolled oats
  • ¼ cup unsweetened coconut milk, extra if needed
  • ¼ cup vanilla greek yogurt
  • 1 teaspoon chia seeds
  • ¼ teaspoon pure vanilla extract
  • 5 medium strawberries, sliced or chopped
  • ½ of a medium ripe banana, sliced or chopped.
  • small pinch of salt
  • 1 tablespoon mini chocolate chips
  • 2 teaspoons pure maple syrup
Instructions
  1. In a 16-ounce mason jar mix together rolled oats, coconut milk, yogurt, chia seeds, vanilla extract, strawberries, banana, and salt. Add more coconut milk if need to make sure all the oats are covered in liquid. Tightly putt the lid on and place in the refrigerator overnight.
  2. Remove the lid and stir ½ of the chocolate chips into the oats. Add more coconut milk to loosen the oats. Stir in the maple syrup and then sprinkle the rest of the chocolate chips over the top.
