Healthy Baked Chicken Taco Parmesan

Ingredients
  • 1 (1.13 ounce) packet taco seasoning (I used Southwest Taco Seasoning by Simply Organic)
  • ½ cup unseasoned breadcrumbs
  • ¾ cup taco sauce
  • 1.5 pounds boneless skinless chicken tenders
  • ¾ cup shredded pepper jack cheese
Instructions
  1. Preheat oven to 375 degrees.
  2. In a medium bowl mix together the taco seasoning and breadcrumbs.
  3. Dredge the chicken in the breadcrumb mixture.
  4. Brush 1 tablespoon of olive oil on a sheet pan.
  5. Lay the chicken tenders on the sheet pan.
  6. Bake for 30 minutes turning the chicken over at around the 15 minute mark.
  7. Remove chicken from oven and turn the broiler to high.
  8. Drizzle taco sauce and sprinkle the cheese over top of the chicken tenders. Place under the broiler and cook until the cheese is melted.
  9. Serve with salad and/or rice.

Make-ahead instructions


This recipe can be made completely ahead of time and stored in the refrigerator. You can also bread the chicken ahead of time and then bake when you are ready to eat. Another option is to cook the chicken tenders without sauce or cheese and freeze ahead of time. Warm in the oven or microwave when you are ready to eat.
