Chocolate Mint Cookie Energy Bite

  • 1-cup Medjool Dates, pitted
  • 1 tablespoon unsweetened cocoa powder
  • ¼ cup chocolate chips
  • 1-cup rolled oats
  • 1 tablespoon chia seeds
  • ¼ teaspoon peppermint extract
  1. In a medium bowl soak the dates in hot water for 10 minutes and then drain.
  2. Place the dates in the food processor and pulse a few times or until the dates become chopped.
  3. Add in the rest of the ingredients and process until a thick batter forms. If the batter seems crumbly then add in 1 tablespoon of water or more if needed.
  4. Refrigerate the batter for 1 hour or until you can form balls.
  5. Roll batter into 20 balls, place in an airtight container, and refrigerate for up to 7 days.
