During the week I need quick recipes. My life is very busy and we are always on the go. Having recipes that are ready when I get home or need minimal preparation are a must for my lifestyle. One way I get dinner on the table quick is with freezer meal starters. I wrote a post last summer with a list of my favorite meal starters – check it out for some ideas.
One meal starter I would like to add to the list – that I now love having in my freezer is pulled pork. I have used this simple recipe in the past and currently have tried the yummy pulled pork recipe from Mama and Baby Love’s Freezer to Family ecookbook. Both work great.
When I first made pulled pork I did what probably everyone does with it – make pulled pork sandwiches. But I have learned that pulled pork is handy to have for many different sandwiches, wraps, salads, and other meals. You can throw a delicious recipe together in minutes having tender pulled pork on hand.
A couple weeks ago I prepared a Cuban sandwich with some pulled pork I made. It was so delicious. Anyway, I had a lot of leftover ingredients so I decided to get a little creative and put a Cuban sandwich spin on a pita pizza. I always have pitas on hand. They make it so easy to throw a tasty perfectly portion controlled pizza together in minutes. And that is exactly what I did with this Cuban Pita Pizza.
I took some shredded swiss cheese, pulled pork, and thinly sliced ham and place it on a pita and baked until cheese was melted. Then I topped it with chopped dill pickles. I don’t know what it is about these flavors but I love it. It was super tasty and filling.
Next time you have these ingredients in your kitchen give this quick easy recipe a try. You will love it.
- 1 whole wheat pita
- 1/4 cup shredded swiss cheese
- 1/4 cup pulled pork warmed up
- 1 slice thinly slice deli ham
- 2 slices dill pickles chopped
- Preheat oven to 350 degrees
- Sprinkle cheese over the pita. Then add pulled pork and ham.
- Bake for 15 - 20 minutes or until cheese is melted.
- Add dill pickle on top and serve.
