    Clean Spinach Salad with Steak, Balsamic, and Crumbly Blue Cheese

    When I bought the ingredients for this salad I had every intention of making this steakhouse pizza I found over at Cooking Light. Little did I know we would be completely burnt out on pizza because of the insane amount my family has been consuming at parties over the last couple weeks. Of course, those pizzas did not compare to the gourmet steakhouse pizza I was dying to make but nonetheless the thought of eating another item that consisted of dough, cheese, and sauce was voted down quickly.

    Therefore, instead of making these ingredients into a pizza I opted for a fresh clean steak salad. This salad was easy to make, only taking about 20 or so minutes. It was also very refreshing to have a salad for dinner instead of our usual pasta, rice, or taco dish. I really liked that I felt full and satisfied not bloated and stuffed after eating it. As I put together my future menu plans I am going to add more salads to the mix.

    To make this salad clean I purchased grass fed organic steak from Wegmans. It was on the pricey side at about $10.00 for a 1lb steak. However, I find with recipes like this you can feed the whole family with one steak because you are including it in with lots of other ingredients. Therefore, to make clean meats affordable always use them as part of a bigger recipe (salad, chilis, soups, etc). It’s when you use them as the main ingredient is when it becomes too pricey. If I were to purchase a steak for each of us (hubs and I) that would have cost $20 but with making it a part of the salad I only had to spend $9. All my other ingredients were also organic and I was able to find the spinach, tomatoes, olive oil, and balsamic vinegar all at BJ’s at a great price. The onion I purchased from Wegmans and that was a bit more expensive but not much more than the other onions available.

    This spinach salad was delicious! I absolutely love the flavors of steak, balsamic, and blue cheese. Add a little red onion in there and yummy you have yourself a clean gourmet meal! If you don’t like blue cheese try feta. Also, don’t limit yourself to these vegetables add whatever you have on hand.

    This recipe will make 2 large salads or 4 smaller ones. If you serve with some homemade garlic bread then the smaller salad should be enough to satisfy for dinner. If not up the veggies for a more hearty meal 🙂

     

     

    Clean Spinach Salad with Steak, Balsamic, and Crumbly Blue Cheese

    Ingredients

    • 1 lb sirloin steak sliced into bite size pieces
    • Salt and pepper
    • 4 cups baby spinach
    • ½ red onion sliced
    • 4 small roma tomatoes cut into quarters
    • ¼ cup crumbled blue cheese
    • 1 teaspoon + 1 tablespoon olive oil
    • 1 tablespoon balsamic

    Instructions

    • Heat 1 teaspoon of olive oil in a large sauté pan. Add steak and season to taste with salt and pepper. Cook until steak is medium to medium well or whatever your temperature preference is. Remove from heat and set aside.
    • In a large salad bowl add baby spinach, onion, blue cheese, 1 tablespoon of olive oil, and balsamic vinegar. Toss until salad is completely mixed and coated with dressing. If you need more dressing add a little more olive oil and balsamic vinegar to taste. Divide among 4 plates and enjoy.

    Notes

    You can also serve this with homemade garlic bread to add a little bit of carbs to the meal.

      This looks absolutely amazing. I’ve been trying so hard to get both my husband as well as my daughter to eat veggies. Yes, my husband is pretty much like a child when it comes to greens. I think this might get him to eat some, but i don’t think it seems very tempting for a 3 year old.

      Even when I hide her veggies in her spoon, I get them in her mouth, but she still manages to eat everything else and spits them out. HELP!
