Smoothies are one meal that I always get questions about. It is hard for some people to understand that a meal consisting of fruits, vegetables, and other ingredients can possibly taste good going down and fill me up. Let me assure you smoothies not only taste good but they keep me completely satisfied as well. Here’s why. I work hard to create recipes that I enjoy. I experiment with different ingredients and find combinations that are both fun and delicious. Once a recipe is complete and meets my criteria it goes into the rotation. I have put together a decent collection of recipes that satisfies all the different cravings I have.
Enter my new Chocolate Covered Strawberry Smoothie. Yep you read that right. As you know I LOVE chocolate. Live for it. It doesn’t need to be a fancy chocolate either. Nope. Anything will do. However, one of my all-time favorite chocolate treats is a chocolate covered strawberry. Oh mama. There used to be a store in the mall that sold THE BEST chocolate covered strawberries you ever tasted. So, as I was thinking about new smoothie recipes chocolate covered strawberries kept popping into my head. I started to experiment.
Of course, I used frozen strawberries because I can always count on a bag of frozen strawberries to be in the freezer. For the chocolate I used unsweetened cocoa. Of course, I could have used chocolate syrup or chocolate chips but….I think you know why I didn’t. To sweeten it up a bit I threw in ½ of a banana and 1 tablespoon of pure maple syrup. This recipe needs a sweetener. Frozen strawberries are always a little tart and unsweetened cocoa is well unsweetened so without sweetener this would not taste right. For a little power boost I added chia seeds. And to make it super creamy and filling I blended all the ingredients with Mori-NU Silken Organic Firm Tofu.
This turned out scrumptious. The recipe makes 2 servings – about 2 cups each. It had the perfect balance of chocolate and strawberry. It was actually like a chocolate strawberry milkshake. Yum!
I never used tofu before so I was excited when Mori-NU ask me to create a recipe using their tofu. I know a lot of people get worried about GMO soy but Mori-NU is made with non-GMO soy and verified Non-GMO by the Non-GMO Project. It is also certified Kosher, Halal, and gluten-free. They also have an organic variety, which I used.
Mori-NU tofu comes in a aseptic package that needs no refrigeration and has a year long shelf life without the needs for preservatives. This is very important to me because I am an avid label reader and try very hard not to purchase ingredients that are laced with a bunch of preservatives.
This tofu is a great way to add creaminess, richness, and protein to your smoothies. Many readers ask me for alternatives to yogurt in smoothies or suggestions to add more protein. I really enjoyed the tofu and would recommend using it as a dairy alternative in smoothies or any other recipe. You can find a ton of recipe ideas on the Mori-NU website. I had no idea tofu could be used in so many different ways.
Chocolate Covered Strawberry Smoothie
2 cups small whole frozen strawberries
½ of a banana
1 tablespoon unsweetened cocoa powder
1 tablespoon pure maple syrup
1 tablespoon chia seeds
1 cup unsweetened coconut milk
1 package Mori-NU Silken Organic Firm Tofu
water, if needed, for consistency
Place all ingredients into a blender and blend until smooth. Add water, if needed, till you get the desired consistency.
