I know it is really hard to believe but back to school is right around the corner. In 4 short weeks we will be back to rushed mornings out the door, making school lunches, after school activities, homework, and everything else the school year brings.
I am not going to lie I get a little anxiety when I think about getting back into the swing of things. Summers are so nice because my husband is home and all I need to do is wake up and go to work. My biggest worry is remembering to bring my lunch!
To ease the transition back to schedules and routines I decided I am going to spend August stocking my freezer with meals, meal starters, and snacks. If there is one thing I have learned time and again is that starting the school year with a freezer filled with food is the way to go. Trust me!
Most of my cooking will be done on the weekend but I am also going to try and fit in some freezer cooking sessions during the week. I want to get as much prepared as possible so I don’t have to think about food again for a month or so.
Also, I am not going to be trying any new recipes during this challenge. Once I have my freezer stocked I will go back to testing and trying new recipes but for now I need tried, true, and easy.
Let’s get started! Excited? I know I am.
This is my anticipated cooking schedule for the next few weeks – I provided links to all the recipes I will be using. My goal is to triple or more each of the recipes.

August 10th – 16th – Breakfast
If there is one meal to have in the freezer it is breakfast. Mornings are crazy in my house and if I don’t have breakfast ready to go my kids are eating whatever cereal my husband snuck in – and so is he.
Here are the breakfast recipes I will be making.
August 17th – 23rd – Lunches
My favorite lunches now are mason jar salads. Love them. Unfortunately, I can only make those a week at a time so I will still have to prepare them each week. Also, we tend to bring leftovers a lot for lunches. However, even with my salads and leftovers I still like to have easy lunches I can grab from the freezer.
These are the lunches I will be stocking my freezer with.
Hot Pockets (turkey, ham, roast beef,etc)
August 24th – 30th – Snacks
Having snacks available is an absolute must in my house. My kids come home starving and if there are no snacks they will be like little vultures circling around me until I throw chicken at them.
Here are the snacks I will be making.
August 31st – September 2nd – Dinner
Oh dinner. I cannot even begin to explain the horror in my house when dinner is not ready by 6:00pm. It is not a pretty site. Well I work full-time so getting homemade dinners on the table by that time is near impossible considering I do not get home until after 5:00pm. Thank goodness for freezer cooking. Love me some freezer cooking. Without it my kids would be eating cereal every night. When I have my meals already prepped and in the freezer getting dinner on the table is a cinch.
I am keeping the dinners I make easy. Like I said earlier I just want to get my freezer stocked so I will be using tried and true recipes.
These are the meal starters and dinners I will make.
Sauce – still need to put this recipe up.
Prepping chicken to use in recipes. Basically, I will cut it into strips and pieces then portioning it out into bags.
Brown rice to use in recipes
So there you go. My 4 weeks of freezer cooking mania! I know it might seem a little crazy – and it is – but I know I will be thanking myself once September hits.
