Simple recipes are something I love to make all year round; but definitely take more of a special liking to during the summer months. Between the heat and summer activities I look forward to healthy recipes I can throw together for a quick dinner.
This easy to prepare Asian Pork Pasta Salad was inspired by a dish I eat at my favorite local Thai restaurant. What I like most about that dish is the crunchy contrast between vegetables and the rice noodles along with the delicious ginger broth – so delicious and one of the perfect flavor and texture combinations in my humble opinion.
I recreated a version of this dish using whole grain angel hair pasta, grilled Asian marinade pork tenderloin, and Taylor Farms Asian Chopped Salad Kit.
The Taylor Farms Chopped Salad kit includes savoy cabbage, green cabbage, carrots, celery, green onions, cilantro, wonton noodles, and sliced toasted almonds. The dressing is a delicious sesame ginger and slaw dressing. I just love Asian flavors, specifically sesame and ginger, so this dressing has become a favorite – I could drink the stuff.
I was overjoyed when I took that first bite – my version was just as scrumptious as my restaurant favorite. Not to mention it was cheaper than going out to eat, healthier because I controlled the ingredients, and super easy to make. This Asian Pork Pasta Salad will for sure be a regular on my summer menu plan.
Asian Pork Pasta Salad
Serving: ¼ of the pasta and Taylor Farms Asian Chopped Salad mix and 4 ounces of grilled pork tenderloin.

**You could reduce the calories and points by reducing the serving of pasta and pork.
1 lb pork tenderloin, marinated in an Asian style or teriyaki marinade (I used this marinade)
4 cups cooked angel hair pasta
1 bag Taylor Farms Asian Chopped Salad Kit, prepared as according to package instructions.
Step 1: Grill pork tenderloin over medium to high heat until temperature of the thickest part of the pork reaches 145 degrees. Let rest then slice and cut into bite size pieces. Set aside.
Step 2. In a large bowl mix Taylor Farms Asian Chopped Salad kit with angel hair pasta. Divide up into 4 bowls. Mix 4 ounces of the pork tenderloin into each bowl. Serve.
**Special note: You can serve this recipe cold or warm.
Make Ahead Instructions
To shave about 25 minutes of the preparation time of this recipe I recommend making the pasta and grilled pork tenderloin ahead of time and store in the refrigerator. When ready you just continue with step 2. Please note this would give you a cold salad rather than warm.
