In the past, when it came to planning out my meals, I frequently used the “fly by the seat of my pants” method – you know the method. Well, this “method” led me to eating lots of take out and prepackaged food which eventually resulted in an extra 50 pounds on my 5ft 3in frame. Not good.

I started menu planning and making ahead my meals over 2 years ago and I can honestly say these two methods completely changed my life. These methods help me become intentional with my foods and because of this I am now down 32 pounds. I still have another 18 pounds to go but I feel confident that it can be done with the systems I put in place.

Creating a menu plan is one of the first strategies I suggest to people when being asked for tips on eating healthy and losing weight. A menu plan essentially organizes your meals and becomes a road map to the foods you are going to eat each week. This gives you better control over your portions, calories, and nutrition. Not to mention, it reduces the stress of figuring out what to eat every day.


Most menu plans available just provide you with recipes. While this works for some people I have found that for a menu plan to be functional and successful – especially for busy parents – it needs to provide information on prepping the recipes ahead of time.     I want to start dieting and one of my problems is that I have a long day, I get up at 4:00 am to start work at 6 am and don’t get home till about 5-5:30 pm, It makes for a long day.
    It makes for a large gap between meals and it seems that is all I think about is my next meal….. lol
    Any suggestions.

    • I would suggest a prep day on Sat. or Sunday to make all you lunches and a few freezer dinner meals. I also make healthy breakfast burrito’s that freeze great and you microwave for about 1.5 minutes….breakfast DONE! The mason jar salads on this blog are awesome and last all week…and travel well for work. Also, make up your snacks, to help curb your hunger between meals. Granola, pre measured in ziplock bags, almonds are great too. Pack a lunch cooler with hummus and veggies, greek yogurt with chopped fruit and agave. It does take some planning, but once you start….you will LOVE it. I would much rather spend two hours in the kitchen on Sunday and Sat, than struggle through the week. Good luck!

    I just purchased your 4 week meal plan and am shopping for week 2 today. I have a question about the breakfast burritos though, how many servings does it provide and what do I use for the wraps? Tortillas I’m assuming, but it’s missing from the ingredients list.
