Ingredients
  • 3 tablespoons vanilla Greek yogurt
  • 1 tablespoon creamy natural peanut butter
  • 1 teaspoon mini chocolate chips
  • 2 original Triscuit crackers
Instructions
  1. In a medium to large bowl place the peanut butter and greek yogurt. If you are using natural peanut butter be sure to stir it up good so the oil is distributed evenly and it is creamy. Using a spoon stir together the peanut butter and greek yogurt until it is combined.
  2. Spoon about 1 tablespoon or more of the greek yogurt and peanut butter mixture onto each Triscuit. Store leftovers in the refrigerator for a quick snack during the week.

My favorite time of day is around 2:30pm. I know that might sound like an odd favorite time of day but for me it’s my “break” time. Yes even though I work from home I still give myself a schedule break time. It is a must! I leave to pick the kids up from school around 3 o’clock and then the “after school crazy town” routine starts. Homework, dance, soccer, basketball, dinner, and everything in between.  If I don’t take this time for me I find that I will have difficulty transitioning from “work” mode to “mom” mode.

During my break time I listen to music or I just sit in silence. I know that might sound odd but I love my quiet time and with the rest of my day being busy – and often not very quiet – I cherish that ½ hour of silence. I am sure you can relate.

I also use that time to enjoy an afternoon snack. Depending on the craving I either grab cheese and crackers, fruit, or something that includes chocolate and peanut butter. Yes…chocolate and peanut butter often find their way into my midafternoon snack time.

My love for chocolate and peanut butter is no secret. I talk about it all the time and often develop recipes using my favorite ingredients. Some would call it an obsession and maybe it is. But some things are better to accept than try to fight. Nobody wins when I remove peanut butter and chocolate from my life. Trust me. Obviously, I can’t grab a candy bar each time a craving hits – that would not be in my best interest. So, it is important for me to create wholesome nutritious recipes using my two favorite ingredients.

A few months ago I got the genius idea to put peanut butter and chocolate chips on a Triscuit. I love Triscuit crackers and regularly have a box or two in my pantry. Rarely, do I just eat them out of the box. They are much more than that. I find Triscuit crackers to be the perfect base and companion for many different ingredients. I always pair them with something.

My go to snack is sharp cheddar cheese with a few Triscuit crackers. Yum. But I didn’t have any cheese and was craving peanut butter so for some reason I decided to put peanut butter on a Triscuit. Oh my! Then I sprinkled a few chocolate chips. Double oh my! I definitely had a “where has this been my whole life” moment”.

Now this snack is not without issue. A serving of peanut butter is only 2 tablespoons. Ummm… I can easily eat double that without even blinking an eye. True story. Especially, when I am slathering it on a Triscuit cracker. So…I needed to figure out a way to stretch my peanut butter calories.

Enter vanilla greek yogurt. Somewhere in Pinterestland I once saw peanut butter mixed into greek yogurt. So I started to experiment. I wanted to find the perfect yogurt to peanut butter ratio for my mid afternoon snack. The ratio I ended up with was 1 tablespoon of peanut butter and 3 tablespoons of vanilla greek yogurt. This resulted in a thick delicious topping/dip that satisfied my peanut butter craving but without using half the jar of peanut butter.

After I combined the greek yogurt and peanut butter I scoop a heaping tablespoon or more on each of the Triscuit crackers. Suggested serving size is 2 topped Triscuit crackers per person.Then I added the chocolate chips. I thought about stirring the chocolate chips into the topping but opted for sprinkling them on top. I love the bite of the chocolate chips.

This snack is delicious. Lick the bowl scrumptious. You get the peanut butter flavor, tang and sweetness from the yogurt, chocolate from the chocolate chips, and texture and salt from the Triscuit. It is truly the perfect mid-afternoon snack bite.
